Have you ever had a cookie exchange at work or school? This is where everyone makes their favorite cookies, and you trade them so everyone gets a few of each kind. I stopped participating for a while-I didn’t mind not always being able to eat cookies that were made with butter or milk chocolate, but I hated not being able to make anything.
Of course, once I started looking around I realized that cookies, like other desserts, didn’t have to be non-vegan to be delicious. I started baking again, and even got a lot of compliments the treats I brought to share with everyone. I’d like to share a few of my favorite cookie recipes with you.
My Favorite Chocolate Chip Cookies
The Secret is the Banana
Makes two dozen
You need:
A 12-ounce package of non dairy, dark chocolate chips.
1 teaspoon of baking soda.
2 1/4 Cups of whole wheat flour.
1 large banana, mashed.
1/4 cup of maple syrup.
1/2 cup water.
Preheat your oven to 375 degrees. Mix all the ingredients together in a bowl. Make sure everything is pretty well combined. Form into 24 cookies, and place on a lightly oiled cookie sheet. Bake for 8-10 minutes at 375. Let cool completely before removing form the cookie sheet.
Cashew-Jam Cookies
Makes two dozen
I love these cookies. For me, they evoke memories of my grandmothers Christmas cookies, eaten out of a Santa Claus cookie tin.
Ingredients:
2 Cups of raw cashews.
1 Cup of rolled oats.
1 teaspoon cinnamon
1/3 Cup of molasses or maple syrup.
1/2 Cup of water.
1/4 cup of oil.
1 teaspoon vanilla extract.
A small jar of your favorite unsweetened jam(I like raspberry)
Preheat your oven to 375 degrees. In a food processor, grind the cashews and oats together for a few minutes. Pour this mixture into a large bowl, and add the other ingredients-except for the jam. Form into 24 balls, and place on a lightly oiled cookie sheet. Make a small well in each ball with your thumb, and place a bit of jam in the well.
Bake for 15 minutes at 375 degrees. Let cool completely, then share and enjoy!
